The passionate Brazilian

The name already suggests that this fruit offers an explosion of flavours. The passion fruit originated in Brazil and grows exclusively in hot climates. The fruit has a tangy flavour with a little sweetness to it. Harvest usually happens in autumn but the fruit is available all year round. Passion fruit, also known as maracuja, is a great source of vitamin C and A during the cold months.

Der Name der Frucht verrät bereits die Geschmacksexplosion, die einen beim Verzehr erwartet. Die Maracuja, auch Passionsfrucht genannt, kommt ursprünglich aus Brasilien und wächst ausschließlich in heißen Klimata. Die Frucht hat ein säuerliches Aroma mit ein bisschen Süße. Maracujas haben im Herbst und Winter Saison und sind während dieser kälteren Monate eine tolle Vitamin C und A Quelle.

Passion fruit varieties

There is an abundance of different passion fruit varieties but the most common is the Purple Passion, a small round fruit with yellow pulp and purple to black skin. You can also find the yellow passion fruit at speciality fruit vendors. It’s bigger than the purple variety and slightly milder in taste. It’s often used for juice production. A curious but relatively hard to find variety is the banana passion fruit, an elongated greenish specimen which has a faint banana note but with the typical tart passion fruit taste. The giant passion fruit, also called giant granadilla, is the largest variety with green skin and a white to pink flesh. Their taste is relatively mild.

Maracuja Sorten

Es gibt eine Vielzahl von verschiedenen Maracujasorten, die wohl bekannteste ist jedoch die Purple Passion, eine kleine runde Frucht mit gelbem Fruchtfleisch und einer dunkelila bis schwarzen Haut. Gelbe Maracujas sind ebenfalls bei einigen Obsthändlern erhältlich. Sie sind größer als ihre lila Verwandten und im Geschmack etwas milder. Sie werden gerne zur Saftproduktion genutzt. Eine ungewöhnliche, etwas schwieriger zu findende Sorte ist die Maracuja-Banane, eine längliche grüne Passionsfrucht die einen dezenten Bananengeschmack hat, jedoch gleichzeitig die typische Säure der Maracuja. Die Riesen-Maracuja, auch Riesen Granadilla genannt, ist die größte unter allen Maracujas. Sie hat grüne Haut und ein weißlich-pinkes Fruchtfleisch. Im Geschmack ist sie angenehm mild.

Useful tips

The skin of passion fruit is inedible but a great indicator for ripeness – the wrinklier the better. Once passion fruit are ripe, store them in the fridge. Passion fruit is ideal to balance slightly sickly flavours and as an addition to creamy dishes – try adding it to the classic Australian pavlova or pair it with white chocolate. Passion fruit also works well with fish, ceviche really benefits from its tartness.

Die Haut der Maracuja ist nicht essbar, sie ist jedoch hilfreich beim Bestimmen des Reifegrades – jeder runzliger desto besser. Sobald Maracujas reif sind bewahrt man sie am besten im Kühlschrank auf. Maracuja ist ideal, um besonders süße Gerichte geschmacklich auszubalancieren. Die klassisch australische Pavlova schmeckt besonders lecker mit der sauren Frucht, auch weiße Schokolade profitiert von der Säure. Maracuja passt auch zu Fischgerichten, zum Beispiel zu Ceviche.
